Yerba mate is primarily cultivated in the subtropical regions of South America, particularly in Argentina, Brazil, and Paraguay. These regions offer the ideal climate for growing Ilex paraguariensis. The plant thrives best in hot, humid weather with well-distributed rainfall and fertile, well-drained soil.

The cultivation process is labour-intensive. It takes several years for the plant to mature and produce leaves suitable for harvest. Unlike other crops, the leaves of the yerba mate plant are harvested multiple times per year. After the leaves are picked, they are traditionally dried using a smoking process. This imparts a distinctive smoky flavour to the tea. The leaves are then crushed and packed into loose leaf or tea bags for consumption.

To ensure sustainable farming practices, many yerba mate producers focus on organic cultivation. This helps preserve the environment and improve the quality of the tea. The focus on sustainability is growing, with more farms adopting agroforestry techniques.  Yerba mate is grown alongside native trees, improving biodiversity and reducing deforestation.
